Maybe add a pressure sensors to the gripper or monitor the current draw from the motor. The feedback to the user could also be something like a little pager vibrator motor.

(make it harder to pull based on the resistance in the gripper motor… so you know when you grabbed something, and perhaps can tell the difference between a light grasp and tight grasp)
